Happy 4th, sweet friends!
We're celebrating today by eating last night's leftovers of this yummy pizza while I make my first attempt at pie-baking. If you don't have much on the agenda today, I definitely recommend trying your own version of this super-filling dinner!
Honey Roasted Chicken & Sweet Potato Pizza
Ingredients:
-Your favorite pizza dough (I used Bob's Red Mill GF flour and yeast)

-Honey roasted sweet potatoes (instructions below)

-Boneless, skinless chicken breast
-Tomato sauce (I add a little garlic and olive oil to mine)

-Heaping helping of your favorite pizza cheese--I used mozzarella & cheddar
1. Prepare your dough as directed. Set aside to rise while you chop sweet potatoes and onions.
2. For roasted sweet potatoes: Preheat oven to 400 degrees. Mix sliced sweet potatoes in a bowl with one tablespoon of olive oil, dash of salt and pepper and a drizzle of honey. Lay out on a baking sheet and bake for 20 minutes, flipping once.
3. For caramelized onion: Heat one tablespoon of olive oil in a skillet on medium-low. Add in chopped onion and stir occasionally for ten minutes. Sprinkle in brown sugar and stir for another 15-20 minutes, or until caramelized. Remove from heat.
4. While potatoes are roasting and onion is on the stove, bring a pot of water to a boil. Add chicken breast and return to boil until chicken is easy to pull apart. Remove from heat and drain, pull apart into chunks and mix in a drizzle of honey.
5. After you've pre-baked pizza crust a little as directed, add sauce, cheese, and toppings (minus onions--add those after pizza is out of the oven!) and return pizza to the oven for time specified by your dough instructions.
6. Remove from oven, top with onions and enjoy!
